Paul Pernot started harvesting on September 1, picking his fruit at around 13% potential alcohol or a bit higher, except for his Bourgogne, which he harvested at the end at up to 14%. He told me that he made the maximum permitted yield in his village Puligny-Montrachet parcels. The malos were done by the end of the year, even earlier than usual at this address, as the cellars weren’t cold. Pernot described 2017 as “a beautiful vintage, but not a classic one in that the acidity is a bit low”—around 3.5 or 3.6 grams per liter. The August sun degraded the malic acidity but the tartaric acidity stayed high, he told me. Incidentally, he views 2017 and 2016 as “roughly the same type of vintage.”
