As usual, Paul Pernot’s new crop of white wines were well into their élevage by the time I tasted them at the beginning of June. He started harvesting on September 1, doing little chaptalization as grape sugars were in the 13% range. With relatively low acidity in the fruit the fermentations went quickly, and the malolactic fermentations finished by early November as the cellars were still warm. The wines were racked and sulfited at the time of my visit and essentially ready to bottle.
