Pernot describes his 2001s as concentrated wines with better acidity than the 2000s (4.2 to 4.3 grams per liter, compared to about 4 in 2000), thanks to a lower crop level. The malolactic fermentations were long and difficult in 2001, he added, in part due to the initially high acids. Pernot 2000s have turned out very well. These highly aromatic wines should offer early accessibility but age well. I found these two vintages quite similar in style and quality, with the 2000s perhaps slightly higher in acidity and more aromatic than the '99s, and the earlier vintage a bit fleshier. "The 2000s are finer, and more typical of our chardonnays," Pernot explained, "but a bit less structured than the '99s." Pernot used more new oak in '99 than usual, but told me he used no new barrels at all in '98 due to the tiny crop size.
