Geoffrey Choppin de Janvry, who took over winemaking duties here in June 2000 after completing his studies in agronomy and enology at Montpellier, bought two triage tables for the 2000 vintage, using the first simply to run off excess water. He managed to make a concentrated and clean set of '00s by ruthlessly eliminating rot-affected fruit. The 2000s were still on their lees and not yet racked in November. Grape sugars were lower in 2000 than in the previous vintage, Choppin told me, but still in the healthy 12.2% to 12.6% range. For the first time at this estate, the '99s were aged on their lees until being assembled for the bottling, which took place between December of 2000 and March of 2001.
