The young 2011s have a balance of acidity and alcohol that reminds him of the 1995s, said Philippe Roty in November.The family harvested beginning on September 3, bringing in fruit with potential alcohol between 12% and 12.5% and chaptalizing the wines up to 13% to 13.5%.The Rotys eliminated up to 10% to 15% rotten and underripe grapes.Philippe told me that he uses a single yeast, which is made in Burgundy, for all of his wines.While I suspect that this frequently contributes an early licorice quality, the Roty wines have a track record for aging very well and leaving that early "primary" character behind.
