Philippe Roty eliminated all the verjus in August of 2008,carried out a "pre-harvest" in some parcels for rot at the beginning of September, then started the real harvest on September 23, tossing out the underripe grapes and beginning with potential alcohol levels of 11.5% to 12.5%. He told me he changed the normal order of the harvest, finishing with his grand crus just before a significant rain event in early October. Roty did a soft pressing as the "seeds were not ripe enough" to support a more energetic pressurage. As at most other addresses, the malolactic fermentations finished late, and Roty described the pHs in the post-malo wines as "barely 3.45." This will clearly be a vintage for long aging. Philippe, who started working with his late father Joseph in 1990, told me that 2008 brought the highest levels of acidity he had yet experienced. "We just lacked one more week of sun for a truly great year," said Roty, who described his 2007s as easygoing wines and the 2006 as ageworthy but easier to taste at the same stage than the 2008s.
