Boillot is obsessed with making clean wines, and thus the hail and rot that have plagued some recent vintages in Volnay drive him nuts. So I was at least slightly surprised to hear of his enthusiasm for the 2008 reds. "I like the wines," he told me, "and they're a very pleasant surprise after the lousy summer we had. Thanks to a very small crop and a lot of selection, we have an interesting result." Boillot finds the wines more fruity and more charming than the 2007s, and he believes the two vintages will be drinkable at roughly the same time. Boillot routinely vinifies with a BIVB-supplied yeast that "respects terroir" and produces a slow and long fermentation. He told me he has done much less pigeage since 2002, and he limited the post-fermentation maceration to five days in 2008 (vs. 10 in 2009). Incidentally, when I brought up the subject of vinifying with stems, Boillot said "I'll be the last winemaker in the area to do vendange entier."
