“Two thousand fourteen brought a decent crop, which was very good news for us,” said David Rossignol in December, adding that the estate made about 40 hectoliters per hectare in its grand cru vineyards. The Rossignol brothers started harvesting on September 15 and actually finished with their vines in Beaune due to the problems with the ripening there. Grape sugars ranged from 11. 3% to 12. 3% and they chaptalized between 0. 7% and 1. 0%, according to Nicolas Rossignol. The brothers vinified their Côtes de Nuits crus with roughly 50% whole clusters but destemmed all of their fruit in Beaune.
