“It was complicated by the weather,” David Rossignol tells me in the ground floor tasting room, whilst his brother Nicolas busies himself down in the cellar. “We had frost damage, less in the Grand Crus than in 2016. We are getting used to organic viticulture and how to treat the vines: small and regular doses throughout the season. We started picking on 25 September until 2 October. As it was a small harvest, we could obtain ripeness, and I prefer that to over-ripeness. We used some whole clusters, between 30% and 50%, slightly less than other years.”
