In the absence of Vincent Boyer on a Saturday afternoon, I tasted with his sister Sylvie, who noted that Vincent used no more than 25% new oak for the '17s and stopped stirring the lees by Christmas. She also told me that the family domain is going bio this year. According to Sylvie, Boyer will be doing a longer élevage for his '17s. The wines will all be racked into cuves in August and Boyer will be holding back half of each wine for a much later bottling--although it was not yet clear how the early and later bottlings will be differentiated on the labels. I was seriously impressed by Boyer's 2017 premier crus.
