Antoine Amiot-Servelle guided me through their 2018s at their tasting room in Chambolle-Musigny this year, where we were briefly joined by his sister Prune. Prune Amiot-Servelle took over the daily running of their 8-hectare organically-farmed vineyards in 2011, although father Christian Amiot continues to play a very active role. "We started the harvest on 1 September for the Chambolle-Musigny Les Amoureuses and the Grand Crus, the rest was picked on 6 September," Antoine Amiot-Servelle told me. "We racked the wines in October. A lot of our vineyards were replanted in 1990 so now that they are reaching maturity, we are beginning to be used for the whole bunch, which is done as a mille-feuille [layering the stems inside the barrel.] There is slightly more stem addition this year as we felt that they were fully lignified. In 2018 we isolated one parcel of Chambolle Les Bas Doix for a separate blend that up until now was blended into the Chambolle-Musigny Village. There was no pigeage [for skin maceration] just an infusion by breaking the cap when it became hard."
