Surprised by the sheer volume of the '99 crop, Christian Amiot did his strongest-ever saignee bleeding off a good 15% of the juice in search of greater concentration. Still, he describes his '99s as easier, more open wines than the '98s, thanks to their thoroughly ripe tannins. They will get an earlier bottling than the '98s.

Christian Amiot's '97s, from thick-skinned, very ripe grapes, were racked only for the bottling last January and February and have turned out very well. They appear to be best suited for drinking on the early side but should give considerable pleasure. Amiot's '98s were actually chaptalized less than the '97s, and despite the fact that they were racked prior to the '99 harvest, they are developing slowly.
