Steve Kistler believes that whole-cluster fermentation gives much more complexity to his wines and does not rack them until bottling. These nuanced, mineral-driven chardonnays do more than wink at Burgundy: they often outdo their Old World counterparts with their complex leesy character. "You're not going to find fruit-driven wines here," Kistler said. He advises drinking his chardonnays at about four to six years though he acknowledges that they can go further-"But at four to six you won't be disappointed." Kistler is very high on his 2004s, believing that they are among the strongest and liveliest sets of wine he has made to date. "They had very low pHs and the fermentations went slowly," he told me.
