Sylvie Esmonin guided me through her 2022s in the barrel cellar located at the foot of Clos Saint-Jacques. “We picked from September 1 to 13,” she tells me. “And we picked the Volnay Santenots on August 30.” Volnay Santenots? I never knew she made this cuvée. Apparently, it was always in a tank without a tap, so she could not pour a sample for visitors, but since she bought a new vat with one, I could finally taste this cuvée, which I like a lot. There are just three barrels, so there isn’t a huge quantity. “We cropped at 35hL/ha. It’s not a big harvest because of the old vines, so the Clos Saint-Jacques was cropped at 28hL/ha. I used 50% whole bunch except for the Bourgogne Rouge that just has a few stems to help the drainage in the vat.”
