Ente maintained that his 2004s are actually lower in acidity than his 2000s, but admitted that 2000s from many of his colleagues were riper, with lower acidity. As is his practice, he harvested early, beginning on September 22. The crop was large, but oidium was not an issue for his chardonnay vines, he told me. Ente is experimenting with a bit of lees stirring this year, as this is exactly the style of wine that can use some enrichment in barrel, but he emphasized that he normally avoids this technique. Ente did his normal late bottling for his 2003s (the wines were bottled just a month before my visit) and he has produced some of the more vibrant white Burgundies of the vintage, despite the fact that he made only minimal acid adjustments to the musts and no further additions following the fermentations. The 2003s, he added, finished extremely dry, with less than a gram per liter of residual sugar.
