Thibault Liger-Belair picked a bit on the late side for riper phenolic material, beginning on September 5, then eliminated 2% to 5% of his grapes due to rot and underripeness. The vintage was tricky to vinify, he told me, "because it was hard to know whether the grapes needed more extraction or a gentler approach." It was necessary to make decisions parcel by parcel, based on the incidence of oidium and mildew and the ripeness and thickness of the grape skins. "Two thousand eleven has fresher aromas than the more massive 2010s," said Liger-Belair, "but the 2011s are the opposite of a come-hither vintage: they started out vertical but have been getting more horizontal with elevage." He added that the last three wines in his range are behind the others in evolution.
