"I love the perfume of the '08s, and they're very concentrated because of the low yields," Bob Cabral said to me in March. "The bad part is that production was way off." Cabral added that he thinks his '08s are "right in line with what people who have followed us expect: lots of aroma and fresh fruit. Nobody was more surprised than I was with how the '08s turned out," he went on. "I was really pessimistic after all we went through during the season so I was shocked at how well things came together." The only cooper with which Williams-Selyem works is Francois Freres, as Cabral believes this approach is essential to maintaining the house's consistency of style. "We've always been really happy with our barrels, which makes this a classic case of not fixing what ain't broke."
