The longest and most expensive harvest in the history of this estate paid off handsomely. Low crops on steep, fast-draining soils like those in Zeltingen were able, with utmost selectivity and the sure hands of Hans and Johannes Selbach in the cellar, to yield some of the best wines of the vintage. "If you worked according to recipe in the cellar," says Johannes Selbach, "you were lost. You had to have the sensitivity of a chef, constantly tasting and adjusting." (Terry Theise)
