Salicutti is another of the young estates that has come onto the scene in recent years with very high quality wines. The vineyards range from 420 to 480 meters above sea level which helps give the wines freshness. The estate uses only natural products to farm its vineyards and yields are kept low, in the range of 40 quintals per hectare for the Brunello. In the cellar, the approach is similarly non-interventionalist. Only indigenous yeasts are used and the Brunello is aged for three years in a combination of smaller 5 hectoliter Allier oak barrels and larger Slavonian oak barrels ranging from 10 to 40 hectoliters. The wines are neither fined nor filtered prior to being bottled.
