Tom Rochioli told me that he prefers the 2005 vintage for chardonnay and 2006 for pinot noir. "The 2006 pinots have the balance to outlast the 2005s," he explained, adding that both vintages possess the acidity to mature gracefully. Balance is not really a great concern for Rochioli. "If we have any issue here," he said, "it's that we have too much natural acidity, and a lot of people would love to have that problem." He told me that three years ago he bought a slower, gentler de-stemmer and he thinks that this has helped him make pinot noirs with greater purity and more harmonious tannins.
