Cathiard carried out a gentle extraction in 2007 because he wanted to make aromatic, supple wines. "They're in a tasty, fruity style," he told me, "like the 2000s but with more acidity." As the wines did not have the structure of, say, the 2005s, he left them on their lees for an extended period; for the first time, he waited until November to rack. Cathiard told me that rot was not an issue for his vines in 2006 but that it was necessary to perform a strict sorting in 2007, and that the crop level was down 30% from the level of '06. I tasted the village wines in a cold cellar under Cathiard's grandfather's house, where they had just been racked into cuves. Cathiard ages all his crus in 100% new oak.
