Cathiard describes 2005 as "a year with great structure and potential." The '05s, he went on, "are complete, balanced and denser than the '04s. But 2004 is tres typique." Vine yields were typically in the 35 to 38 hectoliters-per-hectare range in 2005, compared to 40 to 42 the previous year. Cathiard told me that there are no hard-and-fast rules for extraction here, but he also noted that extraction is never heavy. He has bottled his wines without fining or filtration since 2000.
