Sylvain Cathiard told me his 2004s are "in the style of 2000 but with more acidity. Very crisp, with good typicity. "Cathiard destems the fruit completely, does a cold soak lasting between five and eight days depending on the year, and carries out a long and gentle fermentation. The 2004 premier crus were aged in 80% new oak. The malos finished by June or July and the wines had been racked a couple weeks prior to my visit. They showed lovely purity and tangy character in November.
