I am not the only person who considers Domaine Servin one of the unheralded and perhaps underestimated producers of Chablis. Maybe a little like their voisin, Domaine Droin, they are seen by some as an old-school producer that is not averse to machine-harvesting. There are no concrete eggs dotted around the winery, nor do I expect to see any. Yet the wines not only perform well in bottle, but can age supremely well, as I will explain in a forthcoming Cellar Favorite.
Tasting their 2020s, a mixture of bottled cuvées and some still in barrel, there were a couple that left me scratching my head – namely, the Les Fôrets and the Mont de Milieu. Yet I found much to admire in the Chablis Vieilles Vignes “Massale,” a special selection from 60-year-old vines, and a stunning Les Butteaux that will surely represent outstanding value. Among their Grand Crus, I particularly admired the Les Preuses, often one of their strongest cards.
