With an enviable collection of old vines in the high-altitude sites of the appellation, Thierry Faravel produces wines that convey a suave blend of richness and energy, offering polished tannins and an admirable capacity to age. Faravel says he likes to “make wines that have depth and power but that are not overwhelming, and are easy to drink without being tiring.” The winemaking methodology here is traditional, with minimal intervention. That means concrete vats and old (but not crazy-old) oak foudres, and minimal handling, i.e. no fining, no filtration and bottling by gravity.
