Domaine Hudelot-Baillet is a small but very useful Chambolle producer whose wines have impressed me in recent vintages. “We pruned relatively late at the end of March, and that limited the damage,” winemaker Dominique Le Guen says before cautioning, “but the young vines were affected the most. The average yield, in the end, is 29hL/ha. I started the picking on 20 September for five days, the Hautes-Côtes was picked 12 and 13 October. We did around three to five pigeages, more an infusion in order not to extract vegetal tannins.”
