According to Ross Cobb, the longer he watched the 2011s develop in barrel--as they put on weight and gained in sweetness--the more convinced he became to give them more time in barrel than he has in the past.So, unlike every other producer I know in his neck of the woods, Cobb had his '11s bottled in mid-April 2014 at 12.8% alcohol, and they will be released this fall.That 30-month aging practice will be repeated in 2012 and 2013, and it's Cobb's plan to make it a full-time policy here. According to Cobb, vineyards in the northern sector of the Sonoma Coast were able to be harvested two weeks earlier than those further south, "which increased the amount of disease pressure, especially botrytis, on the southern vineyards, so the northern sites tend to have cleaner fruit."
