Domaine La Bouïssiere is one of the appellation's best and most consistent wineries. Thierry Faravel produces reference point Gigondas that are polished but not slick or overtly modern in style. The wines age effortlessly, even those from blazingly hot vintages like 2003. The Le Font du Tonin, based heavily on Grenache and planted in 1960 on one the highest vineyards in Gigondas, is one of the most age-worthy bottlings of the appellation. Top vintages will reward up to two decades of cellaring, based on my experiences with the wine over the years. Faravel was an early proponent of the use of small, mostly new barriques. He began moving away from them for the classic bottling in the late 2010s and now employs large, used foudres and concrete vats. The Le Font du Tonin is still raised exclusively in barriques, 25% of them new.
