Winemaker James Hall described the 2005 fruit as higher in acidity and lower in alcohol than the past few warmer years, and noted that in the absence of heat spikes the team was able to pick "slowly and carefully." His suppliers did a lot of crop thinning in 2005, especially for chardonnay, but volumes were still up 20% to 30% over the levels of 2004. "Both the clusters and the individual berries were larger," explained Hall, "and there was no loss of size due to dehydration before the harvest, as there had been in 2004 and 2003." Hall did his normal weekly lees stirring but stopped somewhat earlier for the '05s as he found the wines a bit delicate.
