Pala, which farms close to 100 hectares of land and produces about 500,000 bottles a year, is the best source of inexpensive, well-made, varietally accurate wines. It is also the best address for wines made with Nuragus, a local native white grape that gives hearty, herbal white wines that are very flavorful and chewy, and Bovale Sardo, which yields big, thick, rich reds that can age remarkably well. This year, Mario Pala’s daughter has started her own estate called Mora & Memo, but for the moment she is still making wine at her family’s estate. Pala has just recently bought another 2.5 hectares not far the winery and planted to Vermentino and Nuragus. Only natural yeasts, selected in their vineyards, have been used since 2008.
