The team at Nautilus go about their business quietly and competently, and that's reflected in the wines, which are always harmonious and understated, whether it’s their Pinot Noir–dominant sparkling cuvée or their whole-bunch-pressed, large-cuve-fermented Sauvignon Blanc, The Paper. Having tasted the 2007 Pinot Noir more than 10 years after it was bottled, I think there is good reason to cellar the reds. There's also a small parcel of Albariño that is one of the country's most competent to date.
