The harvest took more than 15 days for just 12 hectares, noted estate manager Jean-Pascal Vazart, who started picking merlot on September 17, then brought in the cabernet franc at the beginning of October. "We had a wider window of good weather that permitted us to wait in 2007," he explained, "but it was still easier to pick healthy grapes in 2006." The earlier vintage, he went on, has more material and more structure than the 2007 but he considers the two wines to be of roughly equal quality.

"Two thousand five was a balanced year, a year without excess," noted manager Jean-Pascal Vazart. "It was a regular year, but in a great way, with slow maturing of the grapes. But when the ripeness comes slowly and naturally, there's a lot of chance for human error. Normally we must adapt to the weather, but not this year." Following a couple of what Vazart described as "small crop reductions," L'Evangile produced 39 hectoliters per hectare in 2005. "If you were judicious with the winemaking, you could make a great wine," he concluded. The 2005 weighs in at 13.9% alcohol, the highest level ever for this estate's final assemblage Vazart described the 3.82 pH as "acid for us," noting that the pH of L'Evangile is often in the very high 3.95 to 4.0 range. All of the malolactic fermentation occurred in barriques
