The wines here are finer than ever before, mostly avoiding the chewy, phenolic finishes that have long characterized these remarkably rich chardonnays. The level of solids in the wines is now down to 0.75%, according to Steve Kistler, who notes that "there's not a single lot of grapes that I don't press myself." In addition, Kistler is using less new oak today. The top wines in 1997 were 100% new oak, Kistler told me, but the 2000s are typically between 50% and 60%. Kistler described the 2000 vintage as resembling 1999 in that the wines are not overblown and possess good structure. In both years, he added, the flavors developed well at lower sugar levels. In contrast, the three previous vintages all produced chardonnays higher in alcohol.
