Craig Jaffurs lamented the fact that red wine production at Jaffurs was off by almost 50% in 2009, saying that it was only minor consolation that quality was high. "That kind of adds insult to injury, because we're really happy with what we got, just not with how little it was." Jaffurs told me that he has settled into a comfortable spot working with fruit that comes in at about 24 to 25 degrees Brix because he thinks that he is able to attain the depth and intensity that he's looking for "but not the dullness that can happen when the sugars go beyond that." He also noted that he has been surprised by how well his wines have aged "because we really discovered that by accident, when we started opening up ten-year-old bottles, red and white, that were a lot better than we had expected. We've always looked to make wines that are expressive, and the fact that they age is a bonus, but it wasn't a huge priority." Starting with the 2010 vintage, Jaffurs' red wines are being aged for 22 to 24 months in barrel "to help them loosen up a bit, but not so much, and not for so long that you start to see the wood take over."
