The Pavelots harvested their 2003s during the last week of August with what Jean-Marc Pavelot described as "exceptional sugars, up to 14.5%."They carried out their regular four-to-five-day cold soak, then vinified with much less pigeage than usual.Pavelot noted that the malos perked along until May or June of 2004.The wines were mostly in cuve at the end of November, and bottling was slated for January.
