Enologist Jérôme Flous told me that the high-acid 2014s “were great from the beginning.” But they were so clean and their pHs so low, he added, that the malolactic fermentations were extremely late to start, and I was only able to taste a few of them from barrel last year. Yields in the estate’s old vines and in vineyards hit by the late-June hail were down as much as 50% from production levels in 2015.
