CEO/adviser Bernard Hervet loves the balance of the 2011s, which he says have good pHs but alcohol levels in the very moderate 12.5% range. "We won't have any red wines over 13%," he told me, even after a tiny bit of chaptalization. Hervet described the chardonnay grapes as very pure and clean, noting that Faiveley actually did a stricter sorting at harvest-time in 2010. The 2010s whites here have turned out superbly, showcasing the vintage's rare combination of fresh floral aromas, exceptional inner-mouth energy, outstanding concentration and chewy saline minerality.
