Stephane Montez is now fully set up in his expansive new chai, which sits on the edge of the highest hill in the area, looking out east and across the Rhone.As he was able to build the facility from the ground up it affords him "all the room and equipment I'll ever need and that could never fit into the old cellars" that are tucked under the various buildings on the property.Montez still uses the original rooms, which are mostly tiny, but the vast majority of wines, and all the whites, are now raised in the new building.
