Didier Fabre took pains to explain the important changes made at the largest domaine in Chateauneuf du Pape in recent years. For starters, Mont-Redon has doubled its pigeage capacity; it now owns ten stainless steel cuves that carry out internal pigeage thereby increasing extraction without the risk of oxidizing the must. As of the '97 vintage, 80% of the Chateauneuf was fermented in this manner. The estate has also increased the percentage of wine aged in barriques to about 50%, including 5%-10% new oak. And, finally, filtration has been steadily reduced through the '90s, and the wines made here since 1995 seem clearly richer than those of the '80s and early '90s. Fabre told me the estate will try to bottle its very promising '97 without filtration, for the first time.
