Proprietor John Raytek is one of this country's most promising young winemakers. His professional resume includes a stint as sommelier at the Little Nell in Aspen. Later he was assistant winemaker at Copain and also spent time at Rhys. Raytek is married to Phoebe Bass, whose family owns the Porter-Bass Vineyard, but adds he gets no preferential treatment when it comes to buying fruit!

John Raytek, the new winemaker for the expanding LIOCO project, is now making those wines alongside his own at the Copain Custom Crush facility in Santa Rosa. Raytek likes to harvest at low Brix levels and prefers to use whole clusters for his chardonnays. which are made exclusively from old Wente clones. He has also been experimenting with what he called "broken berries," where the grapes are partially but not completely crushed before fermentation. He makes his pinots with heritage clones, like Calera, Swan and Pommard, "which give more complexity than the Dijons, which are all about fruit." Incidentally, Raytek's 2011 pinots, which I quickly tasted during my visit, look to be outstanding.

Proprietor John Raytek's impressive resume includes two years at Rhys and another four years at Copain. Raytek's wines are distinctive and full of personality. Ceritas is focused on cooler-climates sites. The vineyards are farmed following organic or biodynamic principles, depending on the site. I tasted all of the 2010s from tank in their final blends. These gorgeous wines are deserving of serious attention.
