2019 Blanc de Blancs La Bolorée

Despite all the accolades he has earned over the last twenty years or so, Cedric Bouchard remains the same down-to-earth person I met back when he was just getting started. The approach here is the essence of Champagne deconstructed – single vintage, single parcel, single variety wines. Low yields, low intervention farming and a similarly minimalist aesthetic in the cellar are the rule. All the Champagnes are done in stainless steel, with spontaneous fermentations, no fining or filtering and zero dosage at bottling. These remain some of the purest expressions of Champagne I know of. The 2019s are superb across the board. The only issue is that for the second year, there is no Rosé.
