"The good thing about 2008 is that the wines are easy to drink right now," said Nicolas Boiron. "If you can accept that they aren't meant to age and shouldn't be viewed in the context of 2007 and 2009, then you can find some delicious wines to drink over the next few years." He added that his production was off by over 50% in '08 and that he decided to make just a single bottling of Chateauneuf this vintage. Boiron considers 2007 to be the best vintage he has ever made, emphasizing that "the wines are deceptively agreeable now, because of their rich fruit, which is hiding the tannins and maybe always will."

"There was actually more acidity in 2007 than in 2005," Nicolas Boiron told me, "and the tannins are less noticeable, which will make the '07s drinkable almost as soon as they are bottled. " That would be a mistake, though, "because the concentration of the '07s is incredible. They're going to live for a really long time, and will be great with food because of their freshness. "
