This is a small, new project from, stay with me here, Guillaume Fabre (Clos Solène), his wife, Solène and Guillaume’s brother, Arnaud, who manages sale for Law Estate, and his wife, Chloe, the daughter of L’Aventure’s Stephan Asseo, who is Guillaume’s former boss. Only 250 cases, total were produced from the inaugural 2015 vintage and while the Fabre clan looks to expand production slowly they intend to keep things on the tight, boutique side of the wine business equation, Guillaume told me. The only realistic way to get your hands on these impressive, full-flavored wines is directly from the tasting room, which is in the old Clos Solène space in Paso Robles’ Tin City complex, just south of downtown.
