Mounir Saouma describes his 2001 reds as healthier than his 2000s, but a bit less full-bodied and structured, as well as lower in acidity, than the '99s. It's a typically Burgundian vintage," he said. The wines can be drunk earlier than the '99s but also can be kept longer than the 2000s." The malolactic fermentations did not finish until after the 2002 harvest, and the wines were aging on their lees in all new barrels. After the malos, the acidity levels were rather low, in some cases lower than those of the previous year. But due to the wines' substantial tannins, it would have been a big mistake to add acidity," Saouma maintained. Saouma, whose objective is to be able to offer two good examples of red wine from each village, has just 48 barrels of red wine in 2001, from 22 appellations.
