Francois Labet took some advice from his friend Jean-Marie Balland in Sancerre and started to use cover crop because he was tired of getting rotten grapes (he routinely harvests late, after all). "We plow the soil until early June, then let the grass grow between the rows, but not between the vines. The grass takes up the excess rain. This was a big help in 2010." Labet cools the grapes when they come into the winery, then lets the fermentations start whenever they want; he's no longer obsessed with doing a long cold maceration. "I am less extremist now," he explained. Labet waited until September 19 to pick his Clos Vougeot vines in 2009. He believes that 2009 will be a great, long-lived, balanced vintage. "In comparison, the 2005s have too much sun tones, too much surmaturite," he said.
