Between fires, frosts, cold weather and rain, the last three vintages have conspired to slow down Ryan Zepaltas' plans to expand production--"but it's been a fast lesson dealing with vineyard issues," he noted wryly.Most of the vineyards with which Zepaltas works are cool to start with so he hasn't been concerned with fruit ripeness, which for him "means simple maturity, which happened fine, for me, in 2011; but it was a waiting game."Low sugar levels are one thing, he says, "but the fruit has to be mature; it's not as easy as just picking on an high acid or low Brix number or else we could just harvest in July.You've got to have flavor, right?"
