This up-and-coming estate is owned by the Perez family, based in Rome. Winemaker Fabio Giuli has been with Raimondo for five years (prior to that, he worked for five years at Casale del Giglio, a well-known Lazio winery). The estate owns four hectares and produces 8,000–10,000 bottles per year of Cesanese Rosato Lazio, Cesanese d’Affile Nemora and Cesanese d’Affile Terre Vulpis (the latter name refers to the foxes that are abundant in this still very wild countryside). The cool-climate, mountainous region and the Cesanese varieties combine to make life difficult for most wine producers, and it’s no different at Raimondo: in fact, the estate’s four hectares need, in most vintages, to be harvested four different times, because the rate at which the grapes ripen varies widely from one section of the property to another. At Raimondo, the late-ripening Cesanese varieties grow from 450 to 550 meters above sea level and were planted with a range of exposures, from full east to southwest. The wines are exceptionally well made and showcase the magic that these two finicky red varieties can deliver in the right hands.
