Paul Lato told me that he's slowly moving toward being able to give himself "a sort-of real paycheck" after years of plowing profits back into "the best" equipment and securing and maintaining contracts with the top growers in the Central Coast. "That's more important than anything" to him, he said, adding that he's not supporting a family or an indulgent lifestyle and prefers to spend time close to home rather than on the road. Lato's lineup of wines now includes a grenache from the prized Paderewski vineyard in Paso Robles, which he said that he couldn't resist making given the Polish connection and the chance to work with what he thinks is "some of the best grenache grown anywhere."

Paul Lato fans will notice a few new wines in the range, most notably two barrel-selection Chardonnays that are especially beautiful. Lato started essentially with nothing, but each year his lineup grows, which is great to see. The 2012 Pinots, which are made from fully destemmed fruit, show a little less depth than normal because of the high yields of the year, something that is less of an issue with the Syrahs. As always, Lato's wines are built on fruit and texture, with plenty of support from new French oak. The wines are racy, forward and full of exuberance.
