Pascal Marchand, who considers the villages of Gevrey-Chambertin and Vosne-Romanée most successful in 2015, harvested very ripe fruit with potential alcohol typically between 13% and 13.5% and did “just a bit” of chaptalization. “And we were very mellow with the pigeages,” he added. The '15s, he says, have depth and balance, and strong dry extract. As has been his recent practice, Marchand made extensive use of whole-cluster fermentation, although the percentage of stems he used varied widely according to the cuvée.
Please note that Marchand also showed me a set of estate wines at the end of my tasting, including the multiple Gevrey-Chambertin cuvées that came with his partner Morey Tawse's purchase of Domaine Maume in 2011. These wines are listed separately under two additional headers in this article: Domaine Tawse and Maume by Domaine Tawse. With the 2016 vintage, the words "Maume by" will disappear and the ex-Maume wines will simple be labelled Domaine Tawse.
