John Holdredge told me that in attempt to get greater texture and depth from his 2001 fruit he conducted some vat bleeding, taking off up to 15% of the juice, "and there wasn't much to start with given the crop."That was followed up with "lots of foot pressing" and an extended cold soak to emphasize flavor intensity.Holdredge, who is refreshingly frank when discussing his own wines, thinks that in most cases the '11s "are really approachable and should mostly be drunk up while you hold onto your '10s and '09s and maybe even '08s."None of the fruit that Holdredge harvested in 2011 crested 25 Brix, so "they've got a European weight and profile, which I hate saying because it sounds like I tried to make imitation Burgundy when it's just what the year handed us.And this is the best place in the world to grow pinot noir, anyway, as everybody knows."
